Tired of turkey? Looking for something a little different to serve up this Thanksgiving?

How about a 12-pound water rat that culinary experts say tastes somewhat like a beaver, is less greasy than a 'coon but is not quite as good as possum?

Hold the green bean casserole, ma, I'm comin' home!

America's latest taste treat is called nutria and comes to us courtesy of the good citizens of Louisiana, who, apparently, will eat almost anything.

The decision to market nutria as a food source is not due to its wonderful taste (the smell of cooking nutria has been compared to that of Sarin gas), but to the fact that Louisiana has to eat nutria before nutria eat Louisiana.

Nutria feed voraciously on the roots of plants that help maintain soil stability, and the rodents also dig burrows in the sides of canals, causing them to collapse.

Until the late '80s, there was a good market for nutria pelts, but the animal-rights activists put a stop to that. (You've got to figure that people who walk around with rat skins draped over their shoulders deserve to have red paint thrown on them.)

Today, an estimated 20 million nutria are gnawing away on the Louisiana's rice and sugar cane crops, prompting wildlife experts to take desperate measures.

Anybody for a quarter-pound nutria burger with cheese?

I wish Louisiana the best of luck with its Eat More Nutria campaign, and I think they'll do well once they find a solution to the so-called "image" problem.

Let's face it: Americans are reluctant to eat rabbit, let alone a nocturnal swamp critter that looks like a cross between a beaver and a furry rat and has big, yellow teeth. (Sounds about as appetizing as eating Saddam Hussein, but we'll save that for a later column.)

People don't eat rabbit for reasons that have nothing to do with taste. There's the Easter bunny thing, Peter Cottontail ... the whole image of rabbits is, well, cute.

Nutria have no such problem. In fact, nutria might benefit by advertising itself as the anti-rabbit:

"We stink. We're ugly. We're related to Willard. But slap enough gravy on us and you'll think you're eating filet mignon. We're NUTRIA!"

OK, so maybe the ad campaign needs a little work. The point is that Americans eat lots of things that are every bit as disgusting as nutria and don't think twice about it.

Take hot dogs, for instance. Do you have any idea what's in those things? Trust me. You don't want to know.

Lots of people love crabs and catfish, but maybe they wouldn't if they knew what they ate.

And chicken? Don't even think about it.

Nutria, in its own repulsive, bucktoothed way, may be the perfect meat. It's lean, high in protein and doesn't require any farm subsidies.

Also working in nutria's favor is the time-honored Cajun maxim that anything is edible so long as you deep-fry it and shake enough hot sauce on it.

I envision the day (not tomorrow) that America develops a love affair with nutria.

The Fourth of July will be celebrated with beans and nutria weiners and perhaps a rack of barbecued nutria ribs.

For Christmas and Thanksgiving we will serve roast stuffed nutria with water chestnuts, whiskey and gas masks on the side.
