Boudin Critics:
This
project sprang from Dr. C and Coach T's commitment to enjoying the
subtle differences found in all the boudin of South
Louisiana. Early
each Saturday morning they venture out in one or the other's car,
usually with Dr. C's family dog in the back, eagerly anticipating their
early morning link. They stop at a local gas station for a
large
fountain drink and then purposefully make their way to a local boudin
purveyor. Their analysis of the various links of boudin is based on
experience and passion.
Coach "T"
- Coach "T" is a high school administrator, teacher, and
coach. Born and raised in
"The Berry," he graduated from UL Lafayette and now lives in
Lafayette with his family. Coach T was raised on
boudin. Legend has
it that he moved right from the bottle to the link, skipping all other
forms of baby food.
Dr. C-
Dr. C is a native of Washington State and has lived in Louisiana for
ten years. He resides in Lafayette and is a professor at UL
Lafayette. Dr. C ate his first link of boudin in the front seat of
someone's car in the parking lot of a meat shop in Broussard, LA on his
second day in the state. He's recently trained his
dog to
balance a link on her snout.
